9 lbs. pumpkin, peeled, De-seeded & cut in large cubes
3 lemons, sliced thinly
2 oranges, sliced thinly
6 lbs. sugar
2 tsp. salt

Directions:
Directions:
Remove seed & rind from pumpkin. Cut in about 1" or so, cubes. Cover with sugar & let set overnight.
In the morning, put in large pot, add orange & lemon . Add sugar. Bring to boil over medium-high heat & cook until pumpkin is clear & fruit appears cooked. Remove from heat & put in clean, sterilized jars.
