4 tablespoons butter
4 tablespoons flour
Milk adequate to make creamy sauce
Salt and pepper to taste, if desired

Directions:
Directions:
Melt butter over medium heat. Mix flour to form paste with a wire whip. Add milk and heat slowly until white sauce of desired consistency is formed. Do not add milk too quickly.
Sauce thickens as it cooks.

Alternate procedure:

Mix butter, flour and milk in blender until smooth, then cook as above. It produces a smoother sauce.

Cheese sauce:

Add chunks of velvetta cheese to white sauce and heat until melted and smooth.

Serve cheese sauce over cooked cauliflower, brocolli, asparagus or other foods.

Serve white sauce over eggs au' gratin or other foods as desired.
Makes 2 cups or so.
