12-16 oz. Tricolor rotini, twists or fusilli pasta
1/2 cup red onion, chopped
1 cup greek olives, pitted and chopped
1 cup crumbled feta cheese, 4-oz.
1/4 cup green pepper, finely chopped
2 small tomatoes, chopped
3/4 cup olive oil
6 tablespoons red wine vinegar
1/2 teaspoon to 1 teaspoon salt
2 teaspoons dijon mustard

Cook pasta according to package directions. Rinse in cold water. Drain. Add onion, olives, cheese, green pepper and tomatoes. In a bowl, whisk together remaining ingredients. Pour over pasta. Toss gently. Refrigerate. Serves 6-8.
