2 lbs halibut, cod or haddock fillets, 1/4 lb fat salt pork diced, 1 medium onion chopped, 2 cups diced potatoes, 2 cups water, 1 quart fresh milk, 2/3 cup evaporated milk, 8 soda crackers crushed, 2 tbsp chopped parsley, 2 tsp salt, 1/8 tsp pepper

Cut fish into bite sized chunks. Saute the salt pork until it is a delicate brown. Save the scraps for garnish. Saute the onions until tender, add the potatoes and the water and simmer until the potatoes are just cooked, then add the fish and simmer 5 minutes. Combine the remaining ingredients and heat but don't boil. Add this to the fish mixture and serve piping hot, garnished with the pork scraps.
