4 cups cubed peeled potatoes
1 small onion, chopped
1 teaspoon salt
3/4 cup water
3 cups milk
1/4 cup butter
1 teaspoon chives
1/4 teaspoon pepper
1 8-oz. Package velvetta cheese
1 2.5 oz. Package dried beef or bacon, fried, drained
(preferred)
1 cup cheddar cheese, grated

Directions:
Directions:
Combine potatoes, onion, salt, and water in 2-quart saucepan; cover. Bring to a boil; reduce heat. Simmer for 20 minutes or until potatoes are tender; drain. Mash potatoes slightly. Add milk, butter, chives and pepper. Simmer until heated through. Stir in cheese and dried beef/fried bacon. Simmer until cheese is melted. Serve with grated cheddar cheese as a topping.Serves 8-10
