1/2 cup corn meal

Directions:
Combine water, corn meal and salt and bring to boil. Cook until slightly thick. Remove from heat. Add molasses & shortening. Cool to lukewarm. Soften yeast in warm water in mixing bowl. Add corn meal mixture & blend thoroughly. Add flour to form stiff workable dough. Beat well as adding. Knead until satiny, about 5 minutes. Place in greased bowl and cover. Let rise at 85 degrees for approximately one and one half hours. Cut cheese into 1/4" to 1/2" cubes. Line two round pans with tin foil edges extending (as cheese will burn); grease foil. Place dough in corn meal surface, work cheese into divided dough until cubes are evenly distributed and cheese is covered. Shape into two round loaves. Let rise one hour. Bake at 350 degrees for 45 to 55 minutes. Fold tinfoil over bread during the last 15 to 20 minutes to prevent over browning.
