1 cup white sugar
3/4 cup cooking oil
1 teaspoon salt

Cream above ingredients together. Measure and add at once:
2 eggs
1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon

Directions:
Directions:
Add 1 1/2 cups grated carrots. Grease two small or one large bread loaf pans. Bake at 350 degrees for one hour or until dough is firm on top and breaks away from side of pan. The large pan will take longer.
