6 slices of Bacon
6 cups frozen, cubed Hash Browns
3/4 cup chopped Green Pepper
1/2 cup chopped Onion
Salt and Pepper
6 Eggs
1/2 cup shredded Cheddar Cheese

Directions:
Directions:
Cook bacon in large frying pan, crumble and reserve 4 T. of the drippings. Add potatoes, pepper, onion, salt and pepper. Cook until potatoes are crisp and brown.

Make 6 wells in the potato mixture. Break an egg into each well. Cover and cook on low heat for 8 to 10 minutes. Sprinkle with cheese and bacon and serve.

You can also bake the eggs and hash browns in a preheated 350 degree oven. Put the uncovered, oven-safe frying pan in the oven for about 10 minutes. Just before the eggs are done, sprinkle with the cheese and bacon and bake till cheese is melted.
