Twice Baked Potatoes Recipe

4 (6 to 8 oz.) Russet or Idaho Potatoes
Oil
Kosher Salt
4 slices of cooked, chopped Bacon
4 sliced Green Onions (save some for garnishment)
1 cup grated Cheddar Cheese
6 T. softened Butter
1/3 cup Sour Cream
4 T. Mayo
Salt and Pepper

Directions:

Preheat oven to 450º.

Prick the potatoes, rub with oil and salt the outside. Bake until tender, about 1 hour.

When the potatoes are done, let them cool slightly. Slice in half. Scoop out the flesh and put in mixing bowl. Mash the flesh with the remaining ingredients except the bacon. Spoon mixture back into the potato shells. Top with bacon and return to the oven for another 15 minutes. Sprinkle with the reserved green onions.
