Splash of olive oil
450 g pork or turkey sausage
250 g baby carrots
2 sticks celery, diced
1 leek, diced
1 onion diced
1 tbsp paprika
1 tbsp flour
500 ml stock
400 g can chopped tomatoes
400 g can baked beans

Directions:
Directions:
Preheat oven to 375º.

Heat oil in an ovenproof dish and cook sausages until evenly browned. Remove from heat and cool. When cool, slice into bite sized pieces.

Add carrot, celery, leek, onion, paprika and flour to the pan and cook for 4 to 5 minutes. Add stock, tomatoes and sausage. Cover dish and place in oven for 50 minutes.

Remove from oven, add beans and season. Return to oven for a further 15 minutes.

Serve with crusty bread and butter.
