8 cups mixed greens
1/2 cup very thinly sliced cabbage
1/2 cup cooked fresh or thawed frozen corn kernals
1/2 cup cooked edamame beans (not the pods)
1 tomato, diced
1/4 cup dates, pits removed and cut into thin slices
1/4 cup coarsely grated feta cheese
Honey Lime Dressing (recipe below)
Candied pecans (recipe below)

Honey Lime Dressing ingredients:
1/2 cup plain yogurt
3 tbsp lime juice
2 tbsp honey
2 tbsp unseasoned rice vinegar
1/2 tsp kosher salt
1/2 tsp crushed red pepper flakes
zest of 1 lime

Candied Pecans:
1 1/2 tsp raw egg whites
1/2 tsp water
1/4 cup white sugar
1/4 tsp kosher salt
1 cup chopped pecans

Honey Lime Dressing:
Whisk ingredients together in a small bowl until smooth; chill.

Candied pecans:
Preheat oven to 275º. Line a rimmed baking sheet with parchment paper. Beat egg white and water together in a bowl. Add nuts and stir well until evenly coated. Add sugar and salt and stir until well coated. Spread on prepared baking sheet. Bake 45-55 minutes, stirring occasionally.

Salad:
Toss the greens and cabbage with honey lime dressing to coat. Add corn, edamame beans, tomatoes, dates, pecans and half the feta cheese. Toss. Sprinkle with remaining feta cheese and serve.
