Broccoli Cheese Strudel Recipe

1 knob butter
1 onion, diced
1 large head of broccoli, finely chopped
pinch of red pepper flakes
1/2 tsp salt
black pepper
3 garlic cloves, finely chopped
1 cup fresh breadcrumbs
2 cups smoked or old cheddar cheese, grated
fresh lemon juice, to taste
1 pkg pre rolled puff pastry, thawed but left in fridge
1 egg, beaten

Preheat oven to 425º. Saute onion and salt in butter until soft and sweet. Add garlic and pepper flakes. Toss. Add broccoli and season with salt and pepper. Cook until broccoli is just tender. Turn down heat and stir in breadcrumbs and grated cheese. Squeeze in lemon juice and mix all together.

Remove pastry from fridge. Spoon the broccoli mix into a long sausage shape on one side of the pastry, leaving a bit of a border. Squeeze the mix together as you go. Fold pastry over and tuck underneath, pressing pastry together in a seam. Roll over so seam is underneath. (Can be placed in fridge for 30 mins up to 48 hours at this point).

Make diagonal slashes on top of strudel. Brush with beaten egg. Bake 30 to 40 minutes.
