2 Belgian Endives, trimmed at the base and separated into leaves
1/4 cup sour cream
1 tsp grainy or Dijon mustard
3 slices of bacon, diced
1/3 cup red pepper, diced
1 1/2 cups Balderson Heritage 3 year cheddar, broken into marble-sized nuggets
Honey

Directions:
Directions:
Mix sour cream and mustard.

Cook bacon.

Drop 1/2 tsp of sour cream onto the lower third of each endive leaf.

Place bacon, cheese and red pepper on top in a nice pattern.

Arrange leaves on a plate and drizzle with a thin stream of honey.

Garnish with fresh ground pepper and herb leaves.
