1 (8 oz.) Pkg. Cream Cheese (softened)
1 (6 oz.) Can Crabmeat (drained & flaked)
Use Fresh Crabmeat if available
3/4 Cup Sweet Red Pepper (finely chopped)
1/2 Cup Cheddar Cheese (shredded)
2 Green Onions (finely chopped)
2 Tbsp. Fresh Parsley (minced)
1/4-1/2 Tsp. Cayenne Pepper
6 Flour Tortillas (6-inch)

Directions:
Directions:
In a small mixing bowl, beat cream cheese until smooth. Stir in the crab, red pepper, cheese, onions, parsley and cayenne. Spread 1/3 cupful over one side of each tortilla; roll up tightly. Wrap in plastic wrap and refrigerate for at least 2 hours.
Cut and discard ends of roll-ups. Cut each into six slices. Place on baking sheet coated with nonstick cooking spray. Bake at 350º for 10 minutes or until bubbly. Serve warm.
