1 T oil
6 eggs (beaten)

1 T oil
3 garlic cloves (finely chop)
1 red pepper (deseed & dice)
3 carrots (cut into matchsticks)
1" piece fresh ginger root (finely chop)

6 spring onions- thickly slice
6 oz frozen peas
4 1/2 C cooked long grain rice

soy sauce for seasoning

Directions:

Heat wok or large fry pan.
Put 1 T oil in and stir in beaten eggs till set- remove from wok & set aside
Heat pan & stir-fry for 5 min in 1 T oil:
garlic, pepper, carrots and ginger

Add the following to above mixture & cook stirring for 3-5 min. until piping hot:
onions, peas, rice and pre-cooked eggs from above

Season with soy sauce and serve!
