2 yellow onions
1 Tbsp. butter
1 can (14 1/2 oz.) sauerkraut
1/4 C. water
1 tsp. cumin
4 thick sliced Canadian bacon, about 1 lb.
3 Tbsp. finely chopped parsley

Peel onion and cut into wedges. In a skillet, melt butter. Add onion. Sauté, stirring, over medium heat until soft and lightly browned. Transfer onion to a heavy pan. Add sauerkraut, water and cumin. Bring to a boil; cover. Cook over medium-high heat for about 10 minutes. In a skillet, quickly brown Canadian bacon. Transfer to the pan with the sauerkraut. Bring to a boil again. Cook, covered, for another 6-8 minutes or until heated through. Sprinkle with parsley. Serve immediately. Serves 4.

This is good served with boiled potatoes, mustard or horseradish or bread. May also substitute the Canadian bacon with bratwurst or other spicy sausages.
