4 lbs sirloin cubed
2 cups red wine
1/2 lb bacon cut into 1/4 inch pieces
2 tbsp olive oil
2 large onions chopped
2 carrots sliced
1/4 cup butter
1/4 cup flour
4 cups chicken stock
2 cloves garlic
2 tsp tomato paste
pepper

Directions:
Directions:
Pour wine over beef and marinate for 3 hours in refrigerator. Reserve marinade. Dry beef with paper towels. Saute bacon pieces for 10 minutes in water. Drain and pat dry.. In Dutch oven saute bacon in olive oil over medium heat until crisp. Save 2 tbsp of drippings. Brown beef in drippings. Saute onions and carrots in drippings and remove. Make roux with butter and flour until dark brown. Add broth, tomato paste, pepper, and garlic. Add vegetables and meat. Stir in wine marinade . Cover and bake at 325º for 2 hours. Refrigerate overnight and scrape off fat. freezers well
