Cut up pickles
Brime: 1 c. salt to 9 c. water
2 c. water
1 c. vinegar
2 tsp. powdered alum
8 c. sugar
2 c. vinegar
1 oz. mixed spice
1 oz. celery seed
1 stick cinnamon

Directions:
Directions:
Cut up pickles and put in a brime of 1 c. salt to 9 c. water and let stand for 3 days. Drain and put in clear water for 2 days (changing water each day).
Drain and put in a weak solution of 2 c. water, 1 c. vinegar, 2 tsp powdered alum, food coloring and simmer for 3 hours. Drain and put on the following syrup: 8 c. sugar, 1 pint vinegar and spices wrapped in cheese cloth (1 oz. mixed spice, 1 oz. celery seed, 1 stick cinnamon). Drain syrup off pickles and reheat then pour back over pickles for 3 consecutive days. The fourth day put pickles in jars and put on heated syrup.
