2 pie crusts
4 eggs
2 cups sugar
1 cup melted butter
1 cup raisins
4 tbsp coconut
1 cup walnuts
1 tsp vanilla
baking spray

Directions:
Directions:
Spray cupcake pans with baking spray, and line with pie crusts. In large bowl, beat eggs well and add other ingredients. Mix together. Fill the cups with mix and bake in 450º oven until done. Filling should be firm and done.

This is Aunt Lee's recipe, and she never actually told me how long to bake the chi pies! They were one of her traditional Christmas treats, and I remember them fondly.
