8 cups torn iceberg lettuce
3 cups coarsely chopped cauliflower
1 cup thinly sliced carrots
1 cup sliced fresh mushrooms (optional)
1/2 cup chopped sweet red onion
1 1/2 cups mayonnaise
2 to 3 tablespoons prepared mustard
4 oz (1 cup) shredded cheddar cheese
12 slices bacon, crisply cooked, crumbled

In 13 X 9 inch (3 quart) baking dish, layer lettuce, cauliflower, carrots, mushrooms, and onion. Combine mayonnaise and mustard; spread evenly over onion layer. Layer cheese and bacon over mayonnaise mixture. Cover; refrigerate overnight.
