1 cup finely grated carrot
3 eggs
1/3 cup vegetable oil
1 cup sugar
1 & 1/2 cups whole-wheat flour
1 tsp baking soda
1 tsp baking powder
1 tsp. cinnamon
1/2 cup chopped walnuts
1 can [14oz.] crushed pineapple [drained]

Directions:
If using food processor, grate carrot first to measure 1 cup & set aside. Wisk eggs, oil & sugar together in mixing bowl. Stir flour, baking soda, baking powder & cinnamon together. Add to egg mixture & blend thoroughly. Mix in carrot, nuts & drained pineapple. Pour batter into greased & wax-lined pan. Bake 350º - 40 min. Remove & place on wire rack to cool. Ice with Cream Cheese Icing if desired.
