Applcado Pudding

(This recipe yields 2 servings) Printable Version

* 2 avocados
* 2 of your favorite kind of apples (not green)
* 2 tsp lemon juice
* water (to desired consistency)

Peel and pit avocados. Place in food processor.
If desired, peel apples (I like to leave the skins on mine for a nice red/green combo). Slice apples in half from the top down and use a melon-baller to remove seeds. Cut into large chunks and place on top of avocados.
Sprinkle lemon juice over fruits and being pureeing. Add a little water at a time, until desired consistency is reached (go slowly - the longer it blends the smoother it becomes, even with only a little water). I like to stop when mine reaches a yogurt or mousse consistency.
