3 C milk
1 C evaporated milk
1 C sugar
1/3 C + 2 T cornstarch, packed lightly
pinch of salt
3 egg yolks (slightly beaten)
3 t vanilla

Directions:
Directions:
Bring water in bottom or double boiler to a rolling boil. Combine sugar, corn starch and salt thoroughly. Put milk in top of double boiler.* Take 1 C of the milk and combine with the dry ingredients. Add the egg yolks to the milk and dry ingredient mixture. Then add this to the remaining milk in the double boiler. Cook until thick. Add vanilla. Cool.

Use this cream pie filling for peanut butter pie, coconut cream pie (add 1 C coconut to filling), or banana cream pie.

*If you don't have a double boiler you can make one by placing a heat proof bowl on top of a pan. The bottom of the bowl should fit snugly onto the top of the pan.
