1/4 cup shortening
3/4 cup sugar
1 egg
1 & 1/2 cups flour
1/2 tsp. salt
2 tsp. baking powder
1/2 cup milk
1/2 tsp. lemon extract

Directions:
Directions:
Cream shortening & sugar. Add egg. Add sifted dry ingredients aternately with milk ending with dry ingredients. Add extract. Lightly spray 8" pan with pam & spread 2 cups fruit evenly over bottom. Sprinkle 1/2 cup - 1 cup sugar over if sour fruit used, Next spread batter evenly over sugar & bake in moderate oven 40 min. or until a toothpick comes out clean. Serve with whipped cream or ice cream.
