3/4 c. butter, softened
3/4 c. firmly packed brown sugar
1/2 c. sugar
2 eggs
1 tsp. vanilla
1-1/2 cups flour
1 tsp. baking soda
1 tsp. ground cinnamon
1/2 tsp. salt
3 c. uncooked old fashioned oats
1 c. dried cranberries
2/3 c. white chocolate chips (Ghirardelli is the best)

Preheat oven to 350 degrees. Cream together butter and both sugars. Add eggs one at a time. Add vanilla, cinnamon, and salt. Mix to combine. Add flour and baking soda. Mix to combine. Add oats. Once combined, add in cranberries and white chocolate. Use a small cookie scoop or a spoon to drop rounded tablespoons of dough onto a cookie sheet lined with foil or parchment. Bake in 350º oven for 9 minutes or until edges are golden and centers are still appear soft. It's okay if cookies don't look totally done when you take them out. Allow cookies to cool on a baking rack. Cookies should be soft and chewy.
