2 tbsp extra-virgin olive oil
2 tsp. salt
2 cups medium cornmeal
8 cups water

Directions:
Directions:
Bring water to boil in large, heavy pot. Add the olive oil & salt.Pour the cornmeal into water slowly, stirring constantly.Cook,stirring all the time until polenta pulls away from sides of pot. The polenta should be thick, creamy & smooth.I pour it onto a non-stick baking sheet to form until it is cold. Then I cut into small fingers & serve with Tomato-Onion Compote.

I personally like to brush the polenta with olive oil & either brown it on the BBQ or in a skillet before serving. Our Son William loves this recipe!
