4-6 lamb shanks
2 T. butter
1/2 c. chicken or beef broth
3 T. wine vinegar
1 medium onion, chopped
1 tsp. salt
1/4 tsp. pepper

Directions:
Directions:
In large skillet brown shanks in butter. Transfer meat to baking dish and arrange in a single layer. Combine broth, vinegar and onion. Mix well and pour over shanks. Season with salt and pepper. Cover pan. Bake in preheated 350º oven 2-2 1/2 hours or until meat is tender.

Richard and Alex and Uncle Henry love this recipe and it is so easy! I usually ask the butcher to crack the lamb shanks in the middle, but this is not absolutely necessary.
