25 - 30 3'' cukes washed
Day 1
cover with hot salt brine (1 cup of pickling salt to 2 quarts of water, 1 quart = 4 cups ) Use enough brine to cover the cukes
Let stand 4 days. I use a crock. Use glass container
Day 2
Drain and rinse well. Cover with boiling water . Let stand 24 hours.
Day 3
Drain and rinse. Cover with boiling water and 2 Tablespoons of alum( at the drug store) and let stand 24 hours
Day 4
Drain and rinse. Cut cucumbers lengthwise. Syrup: 8 cups white vinegar, 8 cups sugar, 1/2 bottle celery seed, 1/2 bottle cassia buds
Boil syrup and pour over cukes. Leave 24 hour
Day 5
Drain syrup, reboil syrup, cool a bit and pour on cukes, and leave for 24 hours, each day for next 3 days.
I put a weight on the cukes during the process to make sure the cukes are submerged in the water or syrup.
I leave the pickles in the crock but you can bottle them after the 3 days or when ever you have time
