8 ounces cream cheese, softened
1/2 cup sour cream
1/2 stick butter
1 cup finely chopped onion
4 whole hard-boiled eggs, chopped fine
1 1/2 tablespoons mayonnaise
2 jars good quality black caviar

Directions:
Directions:
1. Grease a 9" round pie plate well with butter.
2. Blend softened cream cheese and sour cream well.
3. Spread cream cheese mixture onto pie plate.
4. Spread layer of chopped onions over cream cheese mixture.
5. Spread layer of hard boiled eggs over chopped onions.
6. Cover with saran wrap and chill in refrigerator overnight.
7. One half hour before serving remove pie plate from refrigerator uncover and spread 2 small jars of good quality black caviar over layer of hard boiled eggs.

We first had this caviar pie at the engagement party for Andrea's brother Gary. His mother in law Grace Searby shared this simple and delicious recipe with us. It's a hit with anyone who enjoys caviar.
