2 tbsp. oil
1/4 chopped green onions
1 garlic clove, minced
3 c cold cooked rice
3 tbsp. soy sauce
2 eggs, beaten
1/8 tsp. pepper
1/2 to 1 c fresh bean sprouts
1/3 c frozen sweet peas, thawed

Directions:
In large skillet, heat oil, saute green onions & garlic until onions are tender. Stir in rice & soy sauce. Cook over low heat 5 to 10 minutes. Stir occasionally with a fork. Push rice mixture to side of skillet, stir in eggs & pepper. Cook over low heat 5 minutes, stirring occasionally. Stir in bean sprouts & peas. Heat thoroughly. Serve with additional soy sauce if desired. You can add cooked chicken, pork, beef or shrimp to rice.
