1/2 lb salt pork diced
4 medium onions chopped
2 garlic cloves crushed
1 cup sliced carrots
1/2 cup chopped parsley
2 cups chopped cabbage
1 cup chopped celery
2 small or 1 large can chick peas - or kidney or canneloni
2 16oz cans tomatoes
12 beef boullion cubes
1/2 tsp thyme
dash cayenne

2 cups chopped escarole or 1/2 package frozen spinach
1-1/2 cups of elbow macaroni or similar
light on salt add it as well as pepper to taste
parmesan cheese
1 tsp basil

Directions:
Directions:
Brown meat and onions in a little oil
Add garlic, celery, carrots, parsley and cabbage
Cook 10 minutes stirring often
Add 12 cups water and remaining ingredients except those below astericks
Bring to boil, cover, simmer 30 minutes
Add remaining and cover and simmer for 10 minutes
