1/2 c. flour
2/3 c. sugar
1/4 tsp. salt
2 cups milk
3 egg yolks ( slightly beaten)
2 tsp butter
1/2 tsp. vanilla
1 1/2 cups coconut

Meringue ingredients
3 egg whites
6 tsp. sugar

Directions:
Directions:
Stir flour, sugar, salt and milk in pan.

Add egg yolks.

Cook over medium heat until it comes to a boil. Remove from heat and add butter, 1 cup of coconut and vanilla.

Pour in a baked pie shell.

Top with meringue and 1/2 c. coconut.

Bake 350º until brown

Beat egg whites until almost stiff. Add sugar and beat a little longer ( until stiff)
