1 can (20 oz) Pineapple Chunks in its own juice
30 frozen cooked Swedish-style meatballs, thawed
1 large green or red bell pepper, cut in 1" pcs
1/2 cup packed brown sugar
3 tbsp cornstarch
3 tbsp vinegar
1 tbsp soy sauce
1-1/2 c white rice

Directions:
Directions:
Preheat oven to 350º.

Drain pineapple chunks, reserving juice. Add enough water to juice to equal 1-1/2 cups. Set juice aside.

Combine drained pineapple chunks, meatballs, and bell pepper pcs in a 2-qt baking dish. Set aside.

In small saucepan, combine reserved juice mixture, brown sugar, cornstarch, vinegar and soy sauce. Cook and stir until thickened and bubbly. Pour over meatball mixture in backing dish. Bake, uncovered about 20 minutes or until heated through.

Meanwhile cook rice.
