Zucchini Marmalade Recipe

6 lbs zucchini, cut, peeled and seeded
12 cups granulated sugar
3 cups oranges with peel
2 cups lemons with peel
2 oz crystallized ginger

Directions:
Directions:
Put zucchini through food processor then into bowl. Pour sugar over top. Cover and let stand on counter overnight. Transfer to large pot.

Cut oranges and lemons into wedges. Remove seeds and put through processor. Grind ginger. Add to zucchini. Stir over medium heat until sugar dissolves.

Bring to boil, stirring occasionally. Boil until thickened stirring occasionally, about 1 hour 15 minutes. Check with small spoonful on chilled plate to see if sets.

Fill hot sterile jars and seal.
