5 tbsp. flour, divided
1/2 pound boneless beef top sirloin steak (cut into 1/2" cubes)
3 tsp. butter, divided
1 medium onion, chopped
1 celery rib, chopped
1 medium carrot, chopped
2 garlic cloves, minced
1 can (28 oz) diced tomatoes
2 cans (14-1/2 oz each) beef broth
1-1/2 cups water, divided
1 tsp. dried thyme
1/2 tsp pepper
1/2 tsp salt
2 cups tortellini

Directions:
Directions:
1) Dredge beef cubes in flour. Brown in dutch oven in 2 tsp butter. Remove and keep warm.

2) In same pan, saute onion, celery, carrot, and garlic in remaining butter.

3) Add tomatoes, broth and 1 cup of water, thyme, pepper, salt and reserved beef.

4) Bring to boil, cover and simmer for 20 minutes.

5) Add tortellini and cook 5 - 10 minutes longer or until tortellini is tender.

6) Combine the remaining flour* and water till smooth. Stir into the pot. Bring back to a boil, cook and stir for 2 minutes or until thickened.

* Use the flour that's left from dredging the beef, with 1/2 cup of cold water.

The is very good. Would be perfect for a luncheon or hearty dinner. Delicious with cheese biscuits.
