3/4 tsp. salt
3 eggs
3 T. oil
6-9 T. water

In your KitchenAid mixer (or by hand in a large bowl), mix flour and salt. Add eggs and oil. When the flour has all been worked in, the mixture will be crumbly.
Begin to add the water, 1 T. at a time. Work well after each addition to incorporate the water into the mixture, Add only enough water to form the dough into a somewhat crumbly ball. Use your dough hook to knead, adding more flour when needed to get a smooth, elastic ball. About 10 minutes. Or if kneading by hand, transfer dough onto a lightly floured surface and knead, adding flour as needed. Invert the mixing bowl and allow the dough to rest under it for 10 minutes. The dough is now ready to roll out and cut into desired shapes or strips.
Let dry on counter for an hour or so, turning frequently if loose on counter. I sprinkle extra flour on it and tumble with my hands every once in a while.

This is the perfect dough for my KitchenAid mixer and pasta cutter. After the dough is ready, I take a handful at a time and run it through the flat roller of the pasta cutter until it gets the thickness that I want. Then I roll those sheets through again using the pasta strip cutter. I sprinkle flour on those and loosely turn while they sit for a while on the counter. Or you can hang them to dry. Just toss them in your soup or boiling water to cook.
