3 eggs, well beaten
1 c. sugar
2/3 c. pumpkin
1 tsp. lemon juice
3/4 c. self-rising flour
1/2 tsp. ginger
2 tsp. cinnamon
1/2 tsp. nutmeg

Directions:
Directions:
Mix well and spread into greased cookie sheet. Sprinkle chopped pecans on top. (nuts are optional) Bake 15 minutes or less at 375 degrees. turn out on towel, roll up hot, and let remain rolled up until cool. Unroll & spread with mixture of 1 c. powdered sugar, 8 oz. cream cheese, 4 T. margarine, and 1/2 T. vanilla. Beat together - roll back up as a jelly roll. Slice to serve.
