1 c diced seeded plum tomatoes
1/3 c thinly sliced fresh basil leaves
1 T balsamic vinegar
5 T olive oil
2 large yellow bell peppers
1-2 loaves of mini french bread
3oz. shredded asiago cheese
4 T freshly grated parmesan cheese

Blend first three ingredients and 3 T oil in a small bowl. Season topping with salt and pepper. Char bell peppers over gas flume or in broiler until blackened on all sides. Enclose in paper bag, let stand 10 min. Peel, seed, and slice peppers. Preheat oven to 375º. Arrange bread slices on baking sheet, brush with 2 T oil. Bake 5-10 minutes until bread is toasted. Top bread with peppers and asiago cheese shavings. Bake again until asiago melts, about 12 min. Spoon on tomato topping, sprinkle with parmesan and Enjoy!!
