7 1/2 c. Milk
2 c. Sugar
4 Junket Tablets
2 T. water
4 eggs
1 T. Vanilla
I can of Milnot or Evaporated Milk
1/2 pint Heavy Whipping Cream
Pinch of Salt

Directions:
Directions:
Dissolve Junket tablets in water. Set aside. Heat milk and sugar together until lukewarm. Once warm, turn off heat and add Junket mixture to pan. Let the mixture set until it clabber's.

Next, separate the eggs. Reserve the yokes. Beat the whites until stiff not dry. Once stiff beat in yokes.

Add remaining ingredients and egg mixture to the clabbered milk. Pour into an ice cream freezer can. Finish preparing based on freezer can instructions.
