1 large lemon Jello
1 c. boiling water
16 oz. cream cheese, softened
1 c. granulated sugar
1 Tbsp. vanilla
1 pint (2 c.) whipping cream, whipped
freshly made graham cracker crust to fit a 13"x9"x2" glass pan, or 2 store-bought graham cracker pie crusts

Reserve 1/2 c. graham crust mixture to sprinkle on top of cheesecake. Pat remaining crust mixture into pan & bake according to box directions. Set aside to cool. Meanwhile, dissolve Jello in boiling water & let set 20 minutes to cool. With hand mixer, blend cream cheese, sugar, & vanilla together until smooth & creamy. Add Jello & combine well. Gently fold in whipped cream. Pour into prepared crust. Sprinkle with reserved graham cracker mixture. Chill until set.
