5 C ground green peppers (12 medium sized)
4 C ground green tomatoes (about 10)
4 C ground onions (7 large)
4 C ground cabbage (1 medium)
1 1/2 C ground sweet red peppers (6 medium)
1/2 C salt

6 C sugar
4 C cider vinegar
2 C water
2 T mustard seeds
1 T celery seeds
1 1/2 tsp tumeric

Directions:

Combine vegetables with salt and let set overnight.

Thoroughly rinse & drain then add sugar, vinegar, water and seasonings.

Bring to a boil and boil for 5 minutes.
Ladle into processed hot pint jars and seal. Invert jars till they seal.

This relish makes the best bar-b-q when mixed with browned beef or turkey. Add equal amounts of relish and catsup. Or use relish to make 1000 island dressing.
