2 1/2 cups plain flour
1 1/2 cups sugar
1 1/2 cups oil
2 eggs
1 tsp vanilla
1 tsp cocoa
1 tsp baking soda
1 tsp vinegar
1 cup buttermilk
2 oz. red food coloring

FOR ICING:
1 i-oz. pkg. cream cheese, room temperature
1 stick oleo, room temperature
1 box powdered sugar
1 cup chopped pecans
1 tsp. vanilla

Directions:
Directions:
Preheat to 350º
Beat eggs and sugar together.
In separate bowl, blend vanilla, cocoa, soda, food coloring - blend.
Then add buttermilk.
Add oil to buttermilk mixture alternately with flour mixture.
After all ingredients have been added, beat about 2 minutes more; pour into 3 round cake plans.
Bake about 25-30 minutes at 350º.
ICING DIRECTIONS: Mix all ingredients; add pecans last and stirring into mixture with spoon.
