2 Egg whites
2 Tbsp Water
1/2 Cup Cornflake Crumbs
3 Tbsp All Purpose Flour
3 Tbsp Grated Parmesan Cheese
1 Tsp Dried Oregano
1/2 Tsp Salt
1/2 Tsp Freshly Ground Pepper
3 Baking Potatoes, Scrubbed and cut into 1/4" wedges

Preheat oven to 400 º Spray a large non-stick baking sheet with non-stick spray. Lightly beat the eggs and water in a shallow bowl. Mix the cornflake crumbs, flour, cheese, oregano, salt and pepper on a sheet of wax paper. Dip the potatoes into the egg whites, then into the crumb mixture, and arrange in one layer on the baking sheet. Lightly spray the potatoes with non-stick spray. Bake until the potatoes are tender and crisp, about 20 minutes. About 3/4 cup per serving.
