Pastry for one 9" pie (or use a "ready made" pie crust)
2 eggs
3/4 cup sugar*
1 tsp. ground cinnamon
1/4 tsp. fround cloves
1 can (16 oz) (or 2 cups thawed pumpkin)
1/2 tsp. salt
1/2 tsp. ground ginger
1 2/3 cup evaporated milk
(* or use 1/2 cup sugar and 1/4 cup maple syrup)

Preheat oven to 425 º Prepare pastry. Beat eggs slightly with hand beater. Beat in remaining ingredients. Place pastry lined pie plate on a cookie sheet. Pour in filling. Bake 15 minutes. Reduce oven temperature to 350 º. Continue baking until a knife inserted in center comes out clean. 8" pie approx. 35 minutes - 9" pie approx. 45 minutes.

Cool. Serve with sweetened whip cream if desired. Refrigerate leftovers.
