Taco “Soup” Recipe

2 lbs ground beef
2 cans of Rotel with Lime and Cilantro
2 cans of pinto beans
2 cans of corn
2 packets of taco seasoning
2 packets of Hidden Valley Ranch seasoning
1 large finely chopped onion
2 tomatoes cut into small pieces
Shredded cheddar cheese
Sour crème
Fresh cilantro
1 bag of tortilla chips

Directions:
Directions:
Combine ground beef and onion into a large skillet and cook until browned.
While meat is browning, combine Rotel, tomatoes, pinto beans, corn, taco seasoning, Hidden Valley Ranch seasoning, and jalapeno into a large pot.
Once ground beef is brown, drain the fat and add the beef and onions to the large pot.
Stir until well mixed and cook on medium heat.
Once mixture is brought to a light boil, reduce heat to simmer and cover.
Let simmer for 30 minutes.
Each person takes a handful of tortilla chips and breaks them into their individual bowl. Top with the taco “soup.” Add cheddar cheese, sour crème, and fresh cilantro.

Extra lean ground beef (90% or higher)
Corn with no sodium added
Low sodium taco seasoning
Reduced fat cheddar cheese
Fat free sour crème
