1 egg, beaten
3 tbsp. fresh lemon juice
1 tbsp. Dijon mustard
1 1/2 tsp. anchovy paste
1 small clove garlic, pressed
1/4 tsp. salt
10 turns, fresh cracked black pepper
1/3 cup extra virgin olive oil
1/3 cup grated parmesan cheese

In a small bowl, mix together all ingredients except oil and cheese. Gradually add the olive oil in a fine stream, while whisking. Add cheese. Serve with fresh hearts of romaine. Enjoy!
