2 tbsp. butter
2 tbsp. flour salt/ pepper to taste
1 cup milk or 1/2 cup milk & 1/2 vegetable water

Cook over medium heat stirrring constantly until thickened.

For Cheese Sauce: Add 1/2 cup grated cheese
For Egg Sauce: Add 1 hard-cooked chopped egg
For Parsley Sauce: Add 1 tbsp. parsley
For Celery Sauce:Add 1/2 cup chopped, cooked celery OR
For Onion Sauce: Cook 1 cup sliced onions-5 min.

I often serve creamed peas using the Basic, with codfish fillets using the cheese &
with Poached Salmon, the Egg Sauce.
