2 tenderloins of pork
salt & pepper
garlic powder 1 tsp

FOR THE SANDWICH
- bread of your choosing, although sourdough is best
- 1 T of Mayo
- 1/2 - 1 cup of hand chopped white/green cabbage
- 1 T of real Cranberry's in sauce
- slice of Provolone Cheese

PORK
-hand rub the garlic all over the tenderloin
-salt & pepper very lightly
-place in a preheated oven in a glass pan covered with foil at 400º
-bake for approximately 1 hour - 1 1/2 hours
-remove & slice middle to see if done

GRILL
-remove pork from pan & place on grill at med to med high temp & grill on all side for 2-3 minutes each to give it a seared affect on the outside, careful not to burn
-allow to completely cool & serve sliced thick or thin

COLE SLAW
-mix the cut cabbage & appropriate amount of mayo in a bowl, adding a small dash of salt & pepper to season

SANDWICH
-spread very lightly a cover of mayo on the inside of each piece of bread
-thin slice the port & pound with a metal/wooden mallet until each slice is deli thin, removing any fat
-place pork on one side of bread & cole slaw on the other
-use the desired amount of cranberry's only after chopping them into smaller pieces
-add cranberry to top of pork & close sandwich
-it is best to serve cold, but it can be pan seared
-it serves up well with a pasta or potato salade

This is a great meal with the pork & fabulous leftovers with the pounded pork, slaw & cranberry sandwich (which taste like the Holidays).
