Mazzone Tomato Gravy (Sauce) and Meatballs Recipe

Ingredients: Sauce: 4 small cans tomato paste 4 (15 oz.) cans tomato sauce 4 large cloves garlic pinch of sugar if sauce is a little bitter 6 Italian sausage (I prefer the hot, it tastes better)
Meatballs: 2 lb. ground beef (or 1lb. beef & 1lb. ground pork) 1 1/2 c. Progresso Italian bread crumbs 1 1/2 c. Parmesan cheese 1/4 c. parsley 2 eggs 1/2 tsp. salt 1/2 tsp. pepper 1 T. garlic powder

Directions:Start frying the Italian sausage in a little oil while making the sauce.
Sauce: Brown (amber color) garlic in olive oil (oil to cover the bottom of your large pot.) Add tomato paste. Add 2 cans of water to each can of tomato paste (mix water in can to get all the paste out). Add tomato sauce. Add 1/2 can water per can of tomato sauce. Add cooked Italian sausage. Add meatballs to sauce when they are done (see below). Simmer for 3 hrs. Add sugar if bitter. After making the sauce, make the meatballs.
Meatballs: Mix bread crumbs and cheese into meat. Add parsley, salt, pepper and garlic powder. Add eggs and 1/2 cup water (more or less depending how dry). Form into large meatballs. You can either fry the meatballs in olive oil or bake them. I have been baking them. Lot less work. Bake on very well oiled baking pan Turn meatballs in the oil so they are oiled and bake at 375º for about 30 minutes turn frequently so they don't get too crusty. Then add to sauce and simmer. |
