1/4 c olive oil
1/4 c honey
3 T dijon mustard
4 garlic cloves, finely minced
3/4 t black pepper
1/2 t. salt
2 lb. salmon fillets
2 lb bag baby spinach
1 T. olive oil
3 T chopped fresh dill

Directions:
Directions:
Wisk and combine first 6 ingredients and place in large zip lock bag. Add salmon and refrigerate 2 hours.
To prepare Salmon, heat oven to 400º. Saute spinach in 1 T olive oil until wilted. Place spinach in a 9 x 12 oiled pan. Remove salmon from the marinade and place in pan on top of spinach. Sprinkle salmon with fresh dill. Bake approximately 20 minutes or until moist and flakey.
